Banana bread in itself is reasonably filling and nutritious, but when you blend it with crunchy and healthy oats, the taste enhances two-fold and adds additional nourishment. Banana bread recipe isn’t difficult to cook and can be stored for at least 2 weeks in an airtight container. Here is a quick banana bread recipe with crunchy oats and can be made in less than an hour.
What you will need:
- Oats – one (1) cup (crushed or full)
- All-purpose flour – one and a half cups
- Brown sugar – half a cup (you can also use normal sugar, but brown sugar is better tasting)
- Fresh cinnamon powder – 1 1/2 teaspoons
- Baking powder – one teaspoon
- Sodium bicarbonate – one teaspoon
- Egg – one (1)
- Mashed bananas – 1 1/2 cups
- Vegetable oil – third of a cup
- Raisins – one cup (cut and washed)
- Vanilla – one teaspoon
Preparation:
- Heat the oven to 180C or 350F.
- In a deep mixer bowl, break the egg and add the sugar.
- Whip the egg and sugar by hand or using an electric blender.
- Add the oil and whip some more so the sugar dissolves.
- Add the mashed bananas and fold well.
- In a fresh bowl, mix the flour, cinnamon powder, baking powder and baking soda.
- Add the flour mix to the egg-banana mix, a spoonful at a time, and whisk well so that all of the ingredients are well incorporated.
- Take some flour and roll the raisins in it, then add to the batter (rolling in flour will keep the raisins from sinking to the bottom of the bread).
- Add the oats in as the last ingredient to maintain the crunch.
- Grease a 9×5 inch bread loaf pan and pour the batter in the pan.
- Sprinkle oats on top and cook the bread in the heated oven for fifty to sixty minutes. Check if it is done by inserting a toothpick in the center of it; if it comes out clean, then the bread is ready.
- Take the bread out of the oven and allow it to cool on a wire rack before cutting in slices. The bread will be moist to eat.
Serving suggestions:
- Banana bread tastes best served with coffee. You may also add prepared coffee to the bread batter to improve the taste.
- If you wish to eat your banana bread as a snack, simply spread some butter and marmalade on it and enjoy!
- This bread may also be served as a dessert by placing some chocolate or caramel sauce on the side and dusting the bread with icing sugar.
